I follow a whole food plant-based diet with the occasional vegan junk food indulgence. Balance is key but always cruelty-free.
HOW IT ALL BEGAN
My vegan lifestyle began during my pregnancy in 2010. I had an almost immediate aversion to eggs and meat. It just grossed me out! I thought my nauseousness was just a “pregnancy thing” but it looking back it was when my curiosity for plant-based nutrition began.
As a business owner and new mom, I often opted for convenience over nutrition when it came to my own food yet I was making homemade organic baby food for my son. As most moms know, we always end up with the leftovers.
Long back-to-back days would lead to late night binge eating. My days of being a “gym rat” were over. I treated working out as a luxury instead of a necessary priority. I quickly put on weight and my health began to decline.
MY WAKE-UP CALL
In 2017, I found myself facing a sobering reality. At only 35, I was diagnosed with pre-diabetes. I was suffering from sleep apnea and I had high triglycerides and high cholesterol. I was obese and I had also grown complacent.
As a mom, I was committed to feeding my child the best I knew how.
As an entrepreneur, I was committed to working hard but at what expense?
I poured love into everyone else… so, why wasn’t I doing it for ME?
My deteriorating health was the wake-up call that propelled my lifelong wellness journey. I knew I had the power to heal myself but how?
For so long, I didn’t feel like myself. I was irritable, anxious, overwhelmed. I attributed it all to stress and too much work instead of the real culprit: lack of discipline and self-love.
THE JOURNEY CONTINUES
So many of us put everyone and everything else first. We turn to food for comfort only to find ourselves trapped in the viscous cycle of yo-yo dieting. Embracing an active, plant-based lifestyle that is both delicious and nutritious has served me well. But the journey continues!
Living a purpose-driven life sometimes takes a wake up call like mine. Success requires support. And I’m here to support you!
Today, I am happy to say that I have completely reversed my detrimental health conditions including my pre-diabetes and I truly feel better than ever! I’ve lost over 80lbs. and I’m still slaying my goals!
My relationship with food has evolved. I recognize that food is fuel but I’m a foodie fist.
I love cooking plant-powered versions of comfort foods with an emphasis on my Cuban culture. I’m all about sharing delicious, plant-powered recipes that anyone can enjoy.
